Chicory Salad With Chia Seed Dressing

If you are looking for some lunch salad ideas that will leave you feeling satisfied and full, look to my new favourite: chicory salad with chia seed dressing. I’ve been trying to add more healthly eating into my weekly meal routine, this salad is one of my lunch repertoire, simple 30-minute meal that taste delicious.

RECIPE

Prepare 25 minutes

Cook

Serves 4 as a side or 2 as a main

Ingredients

100g fresh podded peas/or frozen are also fun
250g pack chicory
½ cucumber thinly sliced
1 medium tomatoe
2 ripe avocados
finely grated zest and juice 1 lemon
1 tbsp chia seeds
3 tbsp extra virgine olive oil
1 tbsp cider vinegar
1 tsp light honey
1 tbsp Dijon mustard

Method

  1. Blanch the peas in a large pan of boiling water for 1 minute, then refresh under cold running water. Drain well and set aside.
  2. Trim the chicory and separate the leaves. Using a mandolin or sharp knife thinly slice cucumber and tomatoe. Halve the avocados and remove the stones and skin. Cut the flesh into slices.
  3. In a bowl, whisk the oil, vinegar, honey and mustard together until thick, then add chia seeds and some seasoning. Gently toss all of the vegetables in the dressing and serve immediate
  4. If you wish you can add some fresh herbs, I personally love thyme so I sprinkled some over my salad 😉

    This sounds like a lovely tasty and light salad. I don’t recall having a salad with chicory before but I’ve had it on its own and quite liked it. Must give this a try.

    I am not familiar with chicory but I sure would love to try this salad recipe! I’d ask around and see if I can get chicory here. If not, could you recommend a substitute that would be close to the taste and texture of chicory?
