I read somewhere “You don’t have to cook fancy or complicated masterpiece – just good food from fresh ingredients.” This is my mantra when it comes to Mia’s food just few fresh ingredients and I’m happy.
Today we made Little Chicken Pie (easy to make and delicious – recipe below). Mia loves all sort of the pies.
Little Chicken Pie
- 1 onion, sliced
- 200g pack skinless chicken thighs, cut into chunks
- 1 tbsp vegetable oil
- 80ml fresh chicken stock
- 20g chives chopped
- 3 tbsp crème fraîche
- 300g potatoes, cut into chunks

*Prep time 10 minutes
*Cooking 30-35 minutes
- Heat oven to 180C/160C fan/gas 4. Heat the oil in a large saucepan then add the onion and chicken. Fry for 5-10 mins until the onion is soft and the chicken is golden. Pour over the stock, bring to the boil, then simmer for 20 mins until the chicken is cooked. Stir in the chives and 1 tbsp crème fraîche
- Meanwhile, boil potatoes until soft. Drain and mash with remaining crème fraîche. Spoon the chicken mix into pie dish and top with mash. Place on a baking tray, then bake until potato is golden.
