Berry Tart


This simple dessert couldn’t be simpler. When you want something sweet but unfussy, go for an easy cake recipe. I love baking but not so good in it. Yesterday I’ve baked this super easy Berry Tart. Sometimes simple dessert recipe can turn an average meal into memorable event.



  • 130 g unsalted butter
  • 260 g digestive biscuits
  • 280 g full-fat cream cheese
  • 300 ml double cream
  • 2 tsp vanilla extract
  • 150 g fresh blackberries
  • 150 g fresh raspberries
  • 150 g fresh strawberries
  • white choccolate, for drizzling


Prepare: 25 minutes + chilling

Cook Time: no cooking time

Makes: 8-10 portions


  1. Start by making the biscuit base. Melt the butter in a saucepan then remove from the heat. Put the biscuits in a plastic food bag and crush them with a rolling pin or blend them to fine crumbs. Transfer the biscuit crumbs to the pan with the melted butter and mix thoroughly. Press the buttery crumbs into the base and slightly up the sides of a 26 cm fluted, loose-bottom tart tin. Chill in the fridge for 30 minutes, until firm.
  2. Place the cream cheese and double cream in a bowl. Beat with an electric whisk or by hand until the mixture forms thick, soft peaks, then add the vanilla extract. Stir until smooth.
  3. Remove the biscuit base from the fridge and spoon the cream cheese mixture onto the base. Smooth the surface, arrange the blackberries, raspberries and strawberries on top, then decorate the tart with white chocolate shavings.
